Sébastien Bras was born into a family of chefs who have made, and continue to make, their mark on French gastronomy. His father, the legendary Michel Bras, inherited the family restaurant in the village of Laguiole, Aveyron, and, in 1992, opened Le Suquet, a restaurant that offers uninterrupted views of the Aubrac plateau : a breathtaking landscape that brings to mind Nordic forests, Mongolian steppes and Scottish moors. Michel Bras quickly took this restaurant to stratospheric heights, gaining three Michelin stars and international recognition. Putting the Aubrac on the culinary map, Bras created iconic dishes such as the gargouillou of young herbs and vegetables, a beautiful tribute to nature, and his famous chocolate coulant. In zoo9, Sébastien Bras took the reins at Le Suquet, where, like his father before him, he creates a cuisine grounded and shaped by its terroir, focused on plants, in which foraging from the wild, the family vegetable garden, and the work of local producers prove to be inexhaustible sources of creativity. Through personal anecdotes, evocative seasonal photography of the local landscape and forty iconic recipes, Sébastien Bras introduces readers to his beloved region and relates the fascinating story of his extraordinary family, in which a passion for beauty and goodness has been passed on for three generations.
